Texas is right smack in the middle of several cultures and cuisines on top of Texas being a country of cultures being the size of the state; and East Texas is where the melting pot is. My name is Mike Rizzo and I the creater of Taste of East Texas. I have published over 450 articles, 5 blogs, 2 magazines and currently working on a book for a World Master Chef. It is has been four years since I have written but, the longer my wife and I live up here in East Texas the more we realize the melting pot of culture and cuisine. Coming from the Gulf of Mexico is the Hispanic and Texmex influence and the South has a cuisines of it's own, and that is Comfort Food. Additionally, the Cajun influence in the far East of Texas and the Southwestern (STEAKS!) area of the country to the West. A good example is Aramadillo Eggs. Living in Houston the majority of my life, I never heard of them until I came up to East Texas. East Texas is truly the barbecue heartbeat of Texas. Dallas has all the fine dining and ethinic restaurants that all large cities have. The best part of all of this, is those of us living in East Texas can go to a restaurant or request catering and know that any of the food prepared from the melting pot of cusines and cultures will be made by an expert chef that is verse is all of these many cusines. I look forward to writing this blog, visiting restaurants and dining with locals to learn more about the East Texas cuisine.
